I found this recipe on a forum somewhere while looking for a nut-free recipe for raw cheesecake. It could easily be made nut-free, all you have to do is either leave the crust out, or make your own nut-free crust! The filling has NO nuts!!!
This is so delicious, I make it every day! I always have frozen strawberries in the freezer. Tastes like strawberry sorbet with white chocolate, and the crunchy sugar is perfect. Satisfies any ice cream craving. Perfect for the holidays as well.
Wonderful raw take on the classic yuletide log. Sponge with jam filling and coated in a chocolate butter icing, frosted with coconut snow.

Well, after 2 weeks of slaving away at school, I’m finally catching a break. To enjoy this little break, I decided to make myself one of the treats that I’ve been missing most after coming back from India. It’s a dessert called rasmalai (literally meaning the “juice of cream”). Traditionally, rasmalai is a pretty labor intensive dish to make, but you all know how much disdain I have for long preparation times. So this is pretty much as simple as it gets. No muss, no fuss, just a delicious dessert for everybody to enjoy. Even my dad (a general anti-raw guy), gave me a wide-eyes “Wow” when he ate these. So try it out, and tell me what you think!
Raw food Tim Tams! - My son wouldn't agree, but for me this is the closest I've come since being raw to that choc-covered biscuit slice with the fudgy innards that - despite being so bad for me - used to taste great savoured with a glass of icy milk.
The resemblance came in the way that, when I nibbled the truffle in between small sips of water, the chia filling literally meltied into the mouth ..... um maybe you had to be there.
This was a recipe that I wasn't expecting to be a keeper so the measurements are approximate.
