This is coleslaw at its finest. It is dairy-free, egg-free, sugar-free, and tasty! The dressing is also incredible. Use it as a may dressing substitute by adding more avocado to make it thicker.

Avocado Salad Dressing---Nut and Olive oil free

I am trying to really cut down on the amount of nuts and oils in my diet, especially since I can tell I have gained weight with all the nut-based Christmas goodies I was eating. So since I couldn't find a salad dressing in any of my recipe books without either a bunch of nuts or a cup of olive oil, I came up with this one tonight and it was a hit! The only fat is from the avocado and one Tbsp of coconut oil, so it's a great low-fat option. Plus coconut oil is a medium-chain triglyceride which actually helps burn fat! Enjoy!

Quick And Easy Kim Chi Salad

A quick, easy and very satisfying salad with foods I have on hand at all times. A good way to get more fermented vegetables in your diet as well. The spicy kim chi is a little too hot for me but the tahini blunts it to just right temperature.
